Investigating effect of temperature on the hydrolysis of lipids using the enzyme Lipase The lipids are a group of substances that contain carbon, hydrogen and oxygen ,as do carbohydrates, but in lipids there is a lower proportion of oxygen. Lipids are insoluble in water and therefore are hydrophobic, however they are soluble in organic solvents such as ethanol Lipids serve a diverse array of functions inside the cell, ranging from being energy sources to constructing the cell membrane. Lipids are made of fatty acid molecules that consist two distinct regions: a long hydrophobic hydrocarbon chain and a hydrophilic carboxylic acid group. Lipids can be broken down by enzyme lipase, a biological catalyst. Enzymes are globular proteins, which coil into a precise three-dimensional shape.
