Charles Thompson Lactase Deficiency Lactose intolerance is the inability to break down the mammal milk sugar lactose in the digestive system. The problem stems from a shortage of the enzyme lactase, which is produced by cells that line the small intestine so the disorder is sometimes referred to as Lactase Deficiency. Lactose is a sugar found in milk, and as a deficiency in lactase means it can not be broken down into it's simpler form of glucose so that it can be absorbed into the bloodstream. All mammalian milk contains lactose. In most cases lactose intolerance develops after around the age of two years and the body begins to produce less lactase. However most people do not experience symptoms until they reach on older age. Symptoms of lactose intolerance are caused by the fermentation of lactose.
