Coursework: How pepsin works with egg albumin Aim The aim of this experiment is to determine weather temperature affects the rate in which pepsin reacts (digests) egg albumin (source of protein). Equipment Tongs Test tube rack Boiling water Egg albumin (16cm3) Water-bath Thermometers Test tube Safety goggles Heating equipment Beakers (3) Ice Pepsin (16cm3 Stopwatch Pipettes Measuring cylinder Method In order to research what effect temperature has on the rate of a reaction between albumin and pepsin I will be measuring the time it takes for the Reaction to complete. I have found out that in chemical reactions such as this a colour change occurs and in this case will turn into a clear solution, and so I will be using the clearness of the mixed chemicals as a measure of how much they have reacted. Therefore when the mixture becomes see through I can assume the reaction is over and stop measuring the time. This will give me a value for the rate at which the reaction occurred, which...
