Variables: The variables that I can investigate in my preliminary work are:> Surface area and volume of potato> Volume of Hydrogen Peroxide> Volume of copper sulphate The first variable will involve me cutting different sized pieces of potatoes. The reason for using different surface areas is that this will determine the number of active sites, for the substrates to react in. The greater the surface area of the potato the greater the number of active sites. A larger number of active sites give more opportunity for substrates to react, increasing the rate of reaction.
