Investigating The Affect Of pH Buffers On The Rate Of Reaction Between Hydrogen Peroxide And Potato Aim: To find out the affect of pH buffers on the rate of reaction between hydrogen peroxide and potato. Relevant Information: Hydrogen Peroxide is an acid solution with the formula, H2O2. There are a lot of different factors affecting the rate of reaction between hydrogen peroxide and potato: pH levels, temperature, the amount of solution and the amount of enzyme (concentration). 1. pH levels - most enzymes react best at pH7 when the enzyme and solution molecules fit together perfectly. This is otherwise known as 'the lock and key mechanism' see fig1. If the pH changes then the enzymes can become denatured (lose their shape) so do not fit any more, causing no reaction. 2. Temperature - all enzymes have their ideal temperature to react at. If their ideal temperature can be reached then the maximum rate of reaction...
