GCSE Biology Coursework Plan. For this experiment I will be examining which pH is the most appropriate for the enzyme, Trypsin, to work in. I will test its speed in different pHs to digest gelatin by placing it in a test tube with some photographic film, which is covered very thinly with some gelatin. After this gelatin is digested off then the film will become transparent. Background Trypsin is a protease, which digests proteins and polypeptides into amino acids and is secreted from the pancreas into the duodenum. The enzyme does not work well in acidic environments, but once the strongly acidic gastric juices (from hydrochloric acid (pH2)) have passed into the duodenum they are met with sodium hydrogencarbonate, which neutralizes the acid. Trypsin is made of proteins and is therefore very susceptible to changes in heat, pH, and heavy metal ions. Trypsin also digests Gelatin (largely composed of denatured collagen) very...
