Osmosis Aim To investigate the effect of varying concentration of a sugar solution in potato sticks of a given size. Scientific knowledge Osmosis is defined in CGP Higher Biology (by Richard Parsons) as: The movement of water molecules across a partially permeable membrane from a region of high water concentration to a region of low water concentration. The movement must take place across a partially permeable membrane such as a cell wall because it must be able to let through small particles. Molecules will keep on moving (diffuse) until the areas are equal (they have reached a state of equilibrium), so no area has a higher or lower concentration than the other. Plant cells have a strong cell wall surrounding them. The cell wall prevents the potato sticks from bursting when they take in water.
