OSMOSIS IN POTATO CHIPS Osmosis is the passage of water from a weak solution to a more concentrated solution, through a selectively permeable membrane. This membrane is like a sieve, allowing solvent molecules, which are small, to pass through it, but preventing larger molecules dissolved in the solvent from passing through. If a selectively permeable membrane separates two solutions of different concentrations then solvent molecules pass through the membrane from the side of lesser concentration to the side of greater concentration. This tends to equalize the concentrations on either side of the membrane. A potato consists of about 80 per cent water and 20 per cent solid matter. Starch makes up about 85 per cent of the solid material, and most of the rest is protein.
