Investigation On Enzymes And The Rate Of Reactions Aim: The aim of this investigation is to see how surface area affects the rate of reaction. Introduction This investigation is about a potato being put into hydrogen peroxide. This investigation will allow me to find out about the enzyme- catalase, which is found in potato cells. Enzymes are protein molecules and act as catalysts within the cells. Catalysts help to speed up a reaction and is not itself used up during the reaction. The enzyme can be affected by the variables temperature and pH. If the temperature is too high the enzyme will denature meaning it will no longer work. Enzymes work to a specific temperature and work best at 40 C and will denature above 45 C. An enzyme also has an optimum pH and works best at about pH 6.5.
