Investigating How Surface Area Affects the Rate of Reaction Aim: To change the surface area of a potato and see how the enzyme catalase affects the breakdown of Hydrogen Peroxide. Background information: Enzymes are synthesised in living cells. Most enzymes work inside the cell; these enzymes are called intracellular enzymes. Other enzymes are made in the cell and then released to perform their function; these enzymes are called extracellular enzymes. An example of an extracellular enzyme is amylase. Enzymes break down substances but they can be specific in what they break down. For example, protease will break down proteins but will not break down lipids but lipases will break down lipids but not proteins. An enzyme is like a lock, when substrate molecules enter the active site of an enzyme they bond together to make a substrate compound and those compounds can be split back into two molecules when re-entering the...
