Aim The aim of the investigation is to see how the mass and length of potato slice change when left in different concentrations of Sucrose solution. Background Knowledge I know that Osmosis will be a big factor which will affect the length and mass of the potato slice. Osmosis is the flow of a substance through a semi-permeable membrane while the other substance is blocked and unable to pass through the membrane. I know that the water will travel both from and to the potato tissue. This process usually takes place along a cell wall. All this basically means is that only small particles are let through while larger ones are stopped.
