How temperature affects the rate of enzyme activity. To measure how temperature affects the rate of the reaction of hydrogen peroxide and the enzyme Catalase. The enzyme Catalase is found in potato and reacts with Hydrogen Peroxide to form water and oxygen: 2H2O › 2H2O + O2 Enzymes are inactivated by excessive heat. This is because they are proteins. Up to about 50 degrees C the reaction rate increases smoothly, a ten degrees rise in temperature being accompanied by an approximate doubling in rate of reaction. Above 50 degrees the rate begins to fall and at 60 degrees the reaction ceases altogether.
