Enzyme Investigation Aim My aim is to find out the volume of oxygen produced when placed in Hydrogen peroxide. Introduction Each Enzyme is a complete three dimensional molecule. Part of its structure has a particular shape that is all important. Enzymes reduce the amount of energy needed for molecules to react together. They are unchanged at the end of the reaction they speed up. They are specific, i.e. they will only speed up the rate of reaction. Enzymes are affected by temperature; this diagram shows the effect of temperature on enzyme action. From 0°c to optimum temperature of the enzyme, the rate increases. The optimum conditions are the conditions under which enzymes work best; this is usually around 37°c for most enzymes. Below this temperature the rate of reaction is slow, above 40°c the enzymes becomes denatured. Denaturing means that the enzyme is permanently destroyed.
