Factors affecting the action of catalyse. Aim- To investigate the rate of which the catalyse in this case the potato breaks down hydrogen peroxide (H2 O2) in proportion to the surface area of a potato exposed to the substrate present. Variables- Temperature Surface area Concentration of Substrate Concentration of Catalyse I have chosen surface area because I think the experiment will be fair to conduct and that it will give the best results. Theory- The theory is that the more of catalyse that is exposed to the substrate then the more the enzyme will be able to react and the more oxygen will be given off to help us record this. Enzymes bind temporarily to one or more of the reactants of the reaction they catalyse. In doing so, they lower the amount of activation energy needed and thus speed up the reaction.
