Background information Enzymes are biological catalysts. All of them are proteins. Catalysts lower the activation energy for reactions. The lower the activation energy for a reaction, the faster the rate. Many enzymes change shape when substrates bind. This is called "induced fit", meaning that the precise orientation of the enzyme required for catalytic activity can be induced by the binding of the substrate. Factors that effect enzymes are temperatures and pH levels. Each enzyme has a best temperature or pH level in which it works at its best. If enzymes get to hot or cold they can mutate causing severe problems in some cases. Enzymes modify, and breakdown proteins sugars and other compounds. Catalase is a biological enzyme, which is found in a plant and animal cell. It has the function of speeding up the decomposition of hydrogen peroxide releasing oxygen.
