Activity 2.7: Why does Colour Leak Out of Cooked Beetroot? Aim: To use beetroot to examine the effect of temperature on cell membranes and relate the effect observed to membrane structure. Hypothesis: As the temperature increases, more pigment will leak from the beetroot into the water. Diagram showing the location of betalins: Method: Look at Activity Sheet 2.7 for details. Alterations were made to the method at steps 2 and 3. The beetroot slices were not placed in the distilled water overnight. Instead they were washed in distilled water and dried using paper towels. Hence step 3 will be changed from the next day, as the experiment will continue to take place on the same day.
