Yeast Yeast is a uni-cellular fungus, widely used in the baking and alcohol producing industries. It is an enzyme, a biological catalyst which speeds up a reaction but remains unaffected at the end. When the reaction is completed, the enzyme is ready to bind with a new molecule. It is a partial anaerobe; it can perform both aerobic (with oxygen) and anaerobic (without oxygen) respiration. The yeast requires energy to perform cellular tasks and it is stored as ATP (C10H16N5O13P3, which is full of very high-energy phosphate bonds and transports energy to cells for biological functions). When there is inadequate oxygen, the yeast has to respire anaerobically, which creates a smaller amount of energy (a mere 210KJ/Mole or 2ATPq, as opposed to 2890KJ/Mole or 38ATP for aerobic respiration), but this keeps the cells alive.
