ENZYMES Structural Enzymes - 90% of globular proteins - The remainder are conjugated proteins which have anon-protein fraction called the prosthetic group. - Many enzymes have relative molar masses of between 10,000 and 500,000. Enzyme Catalysis - Enzymes are soluble in water and work aqueous solutions in living cells. They are some times described as organic calaysts. A catalyst is a substance which affects the rate of chemical reactions. Many of the biochemical reactions catalysed by enzymes are reversible reactions. An example of a reversible reaction is as follows: A + B = C Reactants products At equilibrium the rate at which A + B are converted to C may or may not be equal to the rate at which C is converted back to A and B.
