PREDICTION I predict that as the temperature of the starch and amylase solution increases, the amylase would break down the starch quicker as enzymes work better at a high steady temperature. The enzyme substrate complex in diagram 1 is the result of two things coming together at the active site of the enzyme. The substrate joins into the enzyme to form an enzyme substrate complex, also known as the lock and key theory. I also predict that as the temperature increases by every ten degrees the rate of reaction would increase by double. The amylase molecules will move around quicker and collide breaking down the starch; this is called the collision theory. Not forgetting it does this better at a high temperatures. Diagram 2 also shows that as the temperature increases so does the rate of reaction, however diagram 2 shows that enzymes denature at high temperatures so the rate of reaction...
