Investigation Introduction An enzyme is a biological catalyst (a substance which increases the speed of a reaction without being used up in the reaction). Every different biological process has its own enzyme designed specifically for it. Enzymes work very slowly or not at all at cold temperatures and increase in activity as the temperature is increased but this has a limit as enzymes are protein molecules and animal enzymes are usually denatured (denaturing is where the structure of the enzyme is irreversibly changed so it will no longer work, as in the diagram below) at 40ºc.
