Without them, the rate of the reactions would be so slow as to cause serious, if not fatal, damage. Enzymes are proteins and thus have a specific shape. They are therefore specific in the reactions that they catalyse - one enzyme will react with molecules of one substrate. In this experiment, enzyme amylase is used to study effect of temperature on enzyme activity. This enzyme breaks down the starch into a complex sugar that can be used in the body. It occurs widely in both plants and animals. In humans, it is found in saliva and in pancreatic digestive juices that drains into the alimentary canal.
