... Biology Investigation How long and what temperature does it take for the enzyme amylase to work? Prediction I predict that the amylase will work best at a temperature of 40 degrees Celsius because it is the closest temperature we are testing to body temperature. Method The purpose for this investigation is to find out what temperature the amylase enzyme works best at. We will do this by doing a series of tests to find out results. First of all it would be best to find out about amylase. Amylase is the enzyme which is found in the saliva in your mouth. The salivary glands make saliva which contains the enzyme. Saliva accompanies the teeth in the first stage of digestion. The teeth chew the food so that they form smaller pieces with a bigger surface area. This then allows the amylase to turn starch molecules into maltose molecules. It does this by creating a key and
