Enzymology is one of biotechnology's scientific disciplines as it draws on an ever widening range of fields. It is the branch of biochemistry dealing with the chemical nature and biological activity of enzymes which are biological catalysts which are protein in nature, which facilitate and speed up chemical reactions.
