Coursework Essay: Discuss the uses of enzymes in biotechnology Biotechnology is the exploitation of biological processes for industrial and other purposes, especially the genetic manipulation of micro organisms for the production of antibiotics, hormones, etc. Biotechnology encompasses a wide range of industries such as brewing, baking, cheese production and mushroom cultivation, together with the recent technologies especially in the pharmaceutical industry (antibiotic production, vaccines and diagnostics) and other industries (food, paper, textiles, and waste management). Enzymology is one of biotechnology's scientific disciplines as it draws on an ever widening range of fields. It is the branch of biochemistry dealing with the chemical nature and biological activity of enzymes which are biological catalysts which are protein in nature, which facilitate and speed up chemical reactions.
