An investigation of the relationship between enzymes and temperature Introduction: I am going to conduct an experiment, to find out how different temperatures affect the rate of breakdown of starch with amylase. The volumes of starch solution and amylase must stay the same to ensure a fair test. The experiment will be repeated twice so I obtain three results to receive an average result. I plan to investigate the reaction at 5 different temperatures. They are 35?, 36?, 37?, 38? and 39?C. Iodine is an irritant so certain precautions for safety must be taken. Enzymes and temperature: A rise in temperature increases the rate of most chemical reactions; a fall in temperature slows them down. In many cases a rise of 10?C will double the rate of reaction in a cell. This is equally true for enzyme-controlled reactions, but above 50?C the enzymes, being proteins, are denatured and stop working. Diagram A...
