Action of Amylase on Starch Introduction All of the chemical reactions in our body require enzymes. Enzymes break down large molecules into smaller molecules. Starch, proteins and fats are large molecules, which are too large to pass through cell membranes. But simple sugars, amino acids and fatty acids (glycerol) are much smaller molecules that can easily pass through cell membranes. In order for these molecules to pass through the cell wall, they need to be broken down by the enzymes. There are three types of digestive enzymes: * Amylase * Protease * Lipase These 3 enzymes all break down different types of molecules for example amylase converts starch in to simple sugars. Starch Glucose and other simple sugars. E.g. maltose. Amylase enzymes are produced in three places the stomach, pancreas and in the small intestines. Enzymes work by a theoretical lock and key mechanism. All enzymes have a special shape called the active site and this is the 'key'. The...
